Summer fruit only has a short window. This class makes sure you know exactly what to do with it.

In this hands-on baking class in Vancouver, part of the Kitchen Series at LaSalle College Vancouver, you'll make a frangipane tart from scratch — pastry shell and almond filling both — custard fruit tartlettes built on handmade pastry and a silky pastry cream, and a lemon sabayon whipped to order. Three classic pastry techniques, entirely hands-on, each one built to let the fruit lead.

Led by one of LCV's Baking and Pastry Arts chef instructors in a professional kitchen, you'll leave with the recipes and the skills to make every element yourself again — techniques you'll return to every summer, long after the fruit in this class is gone.

Each class includes a welcome drink paired to the menu, plus recipes and an apron to take home.
